What's For Dinner Wednesday!

Just thought I'd share the yummy recipe I made last night. It's not the first time we've had it. It's SO YUMMY. And its a crock pot recipe. My favorite!

"Steak and Black Bean Chili"



Ingredients:

2 lbs. boneless beef cubes for stew (<-- I've also just cubed up steaks I had in the freezer)
2 tsp chili powder
1 tsp garlic powder
1 tsp ground cumin
1 large onion, chopped (<-- I usually just do a half an onion)
1 large green pepper, chopped (<-- I don't really like green pepper, so I skip this one)
2 (15 oz.) cans black beans
2 (14.5 oz) cans chili-style chopped tomatoes (<-- I can never find exactly the right thing, but any canned chopped, diced, or petite diced tomatoes work)
1 tsp sugar
1 (6 oz.) can tomato paste
salt and pepper to taste
sour cream
shredded cheese

1) Cut the beef into 1 inch cubes (I use my utility kitchen scissors)
2) Place beef in crock pot and turn it on low.
3) Sprinkle chili powder, garlic powder, and cumin over meat.
4) Add onion and green pepper.
5) Drain and rinse the cans of beans and add them to the crock pot.
6) Add tomatoes and sugar.
7) Cover and cook on low for 8 to 10 hours. (<-- I cooked mine on high last night for 5 to 6 hours).
8) Uncover and stir in the tomato paste.
9) Season with salt and pepper to your liking.
10) Top servings with sour cream and cheddar cheese. (<-- we like to throw in some fritos for crunch! It's good!!)

Yield: 6 bowls.
