{what's NOT for dinner}

No recipe to share today gals!  Sorry.  I've been feeling icky today so there will be no cooking I don't think.  BUT .  .  .



Let's talk about cupcakes. Yes, that is a real cup cake that some talented person made. Is it not the cutest cupcake you've ever seen? I thought it was appropriate being the Chinese New Year this week and all. I did a search on flickr to find a picture for this post and just REVELED in all the cute cupcakes that people make and photograph.

I just love cupcakes. White cake preferably, whipped cream topping, not to heavy.

Did you know in the UK they call them "fairy cakes". I think that's way cuter. We should call them that here too.

Anyway - the lesson for today: CUPCAKES ARE GREAT. I wish I had one right now.

2) So we decided that she should jump on Leslie's back.  Like a few more inches would solve the problem. . .

A Few Believe it or Nots

Ok...I am a frazzled, half-finished project, busy body, good intentions person. So, for your reading enjoyment (and perhaps astonishment) here are a few "believe it or nots" from my life.

  • Matt got me a Nikon D60 as a late B-Day/Early C-Mas Gift
  • I have a stack of 80 C-Mas cards half way ready to send
  • Both of your birthday gifts have been sitting in my closet since early Oct in Shan's case & Early Dec in Britt's case
  • my Christmas decorations are half way put away & are driving me CRAZY
  • I am attempting to sew new pillow covers for my couches & can't seem to get started for fear that they will turn out HORRIBLY
  • Grayden is crawling everywhere & stands up to everything & is only a little over 6 months!
  • I am way overdue for a hair cut and sometimes feel like one of the Beatles
  • Aerobics is actually something I look forward to attending 3x's a week
  • My entire bedroom floor is covered in dirty laundry just waiting to be sorted & washed
  • I am slightly obsessed with scrapmatters & check the forums daily

There...now you have a small insight on what I've been up to (or haven't in the case of the laundry) What is new with you two?

It's Wednesday....What's for Dinner?

This is my "signature" meal. I will make it anytime we are having someone over for dinner. Whenever I ask Matt what he wants for dinner he will request this, and everyone who has eaten it (no exaggerations EVERYONE) comments on how delicious it is! I hope that if you decide to make it you'll feel the same way!

Chicken Enchiladas

2 Tbsp. margarine
1 can (4oz) chopped green chilies
1 can cream of chicken soup
1 1/2 C sour cream
1 1/2 C cheddar cheese, grated
1 Tbsp. dried parsley
pepper to taste
3 C cooked chicken, diced (3-4 chicken breasts)
Flour Tortillas

In large skillet, melt margarine; add chilies, Heat through then add soup, sour cream, cheese, parsley, and pepper. Reserve 1/2 of the sauce; add chicken to remaining sauce. Heat flour tortillas in microwave for 45 seconds; put spoonful of sauce mixture on tortilla and roll. Place in a well greased Pyrex dish. Continue until all chicken mixture is gone. Pour reserved sauce over the tortillas. Sprinkle with 1/2 cup of cheese. Bake, covered, in 350 degree oven for 30 minutes.

Strawberry Shortcake

I chose Strawberry Shortcake. The more I thought about it the more I remembered how much I loved Strawberry Shortcake. I had her, Apple Dumpling and Huckleberry pie. I also had a Strawberry Shortcake bike and sheets! Look at how cute I am in my big girl bed! I remembered that my mom had these pictures so I went home this weekend and got my scrapbooks so I could scan these pictures & post them. Wouldn't it be fun to have our pictures of when we were little?

RAINBOW BRIGHT!

Did you guys love Rainbow Bright when you were little? I came across this website with all kinds of Rainbow Bright pics and I was SERIOUSLY TRIPPING OUT!!!!

Which brings me to my great idea. I think our blog needs another makeover. What's for dinner Wednesday

Hi ladies! I got this recipe from one of my old YW leaders. She gave me a cookbook (that she wrote) for my wedding.


Carolina Honey Crockpot Pork
(kind of like sweet & sour BBQ sauce)

Approx. 4 to 8 boneless pork chops (depending on the size, bone-in ones work too)
1 c. ketchup
1 c. vinegar
½ c. molasses
½ c. honey
1 tsp. liquid smoke
½ tsp. salt
¼ tsp. garlic powder
¼ tsp. onion powder
¼ tsp. Tabasco pepper sauce

Mix all ingredients with a wire whisk until smooth. Bring ingredients to a boil, reduce heat and simmer until thickened (just like a bottled sauce not a paste) about 35 minutes. (This can be refrigerated at this point and used just like you would use any BBQ sauce).

Remove any excess fat from meat. Place meat in crockpot and cover with sauce. Cook on low 6 to 8 hours. Serve over hot rice. This sauce also works with chicken too (chicken cooks faster in crockpot).

We like to use short ribs in stead of pork chops and I have made this with chicken and it’s really good too. I hope you guys try this one out cuz it’s so good. We’re having it for dinner tonight so I’ll take some pictures and post those later today.

Just Wanted to Say Hi

Hello my friends.  I just felt like making a post to say hi.  And I tried to think of a funny story or something I could tell you to make this post more than just "hi".  So let me tell you the tale of Chad's mustache.

You may or may not know that Chad has been having some interesting hair and facial hair for the last year or so. He grew his hair out long & grew a scruffy patchy beard (I'm sorry to say that the Rodee's have very unfortunate facial hair). Everyone always gave him a hard time about looking like Hobo Joe, but after a while I decided to quit saying anything because I felt like we just needed to love and accept him no matter how homeless he was looking.


(This is Chad's 'look' at Thanksgiving.)

I'm not saying I don't like the long hair/scruffy look.  Hello - have you seen my husband?  I think the reason we all hated it so much is because it just didn't seem like CHAD to us.  You know??  

But he finally decided it was time for a change, so he cut his long hair and shaved. But he didn't shave clean - he left A MUSTACHE. And a little soul patch, but it was the mustache that was the worst. Here is Chad on Christmas morning lookin' like . . . well I don't want to say, but its not good.


This picture doesn't even do justice to the weirdness of that mustache!!

So ok - Christmas morning - we're all sitting at the table eating breakfast after our presents have all been opened. Chad got a new Salt Lake Real hat that was bright red and yellow with white mesh. Like a trucker hat sort of, which he was wearing. He also go this long sleeved soccer jersey that has all these logos and insignia on it from Chile that Scotty sent him, which is also wearing. He's sitting straight in front of me and without really thinking I just say - "Chad, you look like a Nascar fan". He immediately flicks his hat off and drops his jaw like I just said "Chad you're really ugly" or something. He's obviously offended!

Chad says "That is like the worst thing you could have said." And I said "I wasn't trying to be rude, its just with the hat, and the jersey and the mustache . . . " and he says "I know - you're right. That's why Im freaking out. You're right. I want to shave right now! You could have said I looked like anything else, but a NASCAR FAN!? That's the worst." (Remember Chad's really into cars and apparently Nascar is not cool in his book). It was really funny and we all laughed and kept on eating. Eventually Chad gets up and leaves the room. No one really noticed or anything. We just assumed he was done eating or something.

Literally 5 minutes later Chad comes back and I catch a glimpse of him but his back is sort of turned to me. . . wait could it be . . . did he just go SHAVE?! He turns toward me a little more and I say "DID YOU JUST GO SHAVE?!" and he turns toward us all and sure enough THE MUSTACHE IS GONE. The entire table bursts into crazy laughter! "That's all it took!?" "You just got up like 5 minutes ago!!!" We are all just dying! He FINALLY looked like the old Chad we knew and loved. He trimmed but left the soul patch, but I don't mind it!



It was probably the funniest and best thing that happened on that Christmas morning! He looks soooo much cuter. So much cuter in fact, that like a day after he shaved his 'stache he finally kissed the girl he's been dating . . . coincident??

So that's the tale of Chad's mustache. :) Hope you enjoyed it. See ya!
